    When one goes overboard with food, and especially with sweets, one always looks for -half jokingly, half seriously- the person responsible for giving in to temptation. If we are in the province of Cádiz, there is an easy solution: point to the Iberian apis mellifera, the small and industrious bee that produces one of the tastiest types of honey with the best quality in Spain.

    Resident in cork oak forests, olive trees, and other landscapes in Cadiz, these insects make a nectar that is left to rest for between three and four months, and which, in addition to being tasted in situ, are the spearhead of a gastronomic tradition of sweets and cakes that make the towns of Cádiz a destination of flavors.

    Sweets from Jerez de la Frontera

    Returning to these industrious animals, the first stop on this route is the Museum of Honey and Bees, in Ranco Cortesano (Jerez de la Frontera), where you can learn about the beekeeping process and the benefits of this sweet delicacy for the health, with visits to the hives, tastings and classes on making candles with virgin wax.

    In the surroundings you can taste a copious meal in the restaurants that are in the region, those roadside restaurants with wide spaces, abundant dishes and generous smiles.

    According to Cádiz Turismo, some of the suggested ones are Venta Gabriel, Venta Lomopardo and Venta Cartuja.

    The gastronomy of Medina Sidonia

    The next point on the route is Medina Sidonia, a town hanging from the hill with beautiful views, and which is rightly considered the capital of Andalusian confectionery.

    Many of the traditional desserts are made with the famous honey of the region, in a long tradition to which are added small sweet jewels such as the bones of saint, the alfajores from Medina, the amarguillos, the chocolate, the bread from Cádiz, the brown cake, shortbread and many more.

    In some factories, such as Aromas de Medina, tastings can be combined with guided tours of the plant, while others, such as Sobrina de las Trejas, boast more than a century and a half of history.

    In addition to this bakery, other nearby ones display their creations and can be savored in La Alameda, the quintessential walk in Medina Sidonia.

    Prado del Rey, the mecca of honey

    But if there is a mecca for honey, it is Prado del Rey, a town that is part of the Cadiz white villages route, which is surprising for its rectilinear layout (it is noted that it was founded in the 18th century).

    About half of the hives in the province of Cadiz are managed by companies based in Prado del Rey.

    In addition, in autumn a famous Honey and Tapas fair is organized, where this creation of bees is promoted with tastings, presentations of new desserts and related products such as aromatic candles.

    But the rest of the year there are possibilities to buy pots of different sizes with this product, such as chestnut honey, coriander honey, orange blossom honey or honey that is sold with a piece of honeycomb; that can be found in places like Prado Miel or El Zanganillo.

    Or if you want to try it as an ingredient in sweets, then you have to go to places like Sandra Bakery.

    Many of the apiaries are located in the Sierra de Grazalema natural park, as well as in Los Alcornocales, places of great beauty that are worth a visit.

    In the nearby town of El Bosque there is a Cheese Interpretation Center, which allows you to discover the secrets of those made with milk from Payoya goats and Merino sheep from Grazalem, whose wedges can be combined with honey from producers in the area.

    This pairing can also be purchased in Grazalema, a town with a reputation for being one of the rainiest in Spain, or discover some of the desserts made by the La Golosa pastry shop.

    Speaking of native sweets, in Jimena de la Frontera a different type of piñonate is made than in other regions, as you can try at the El Avio association.

    Flavors of Algeciras

    Algeciras, the second most important city after Cádiz, has a long pastry tradition due to the strong gastronomic influence of the Arab culture, with creations that, in addition to honey, contain fruits such as almonds and dates and spices, such as those that can be tried in the Alhambra pastry shop , or those found on José Santacana and Duque de Almodóvar streets.

    The River of Honey

    It was logical that in these lands there is a River of Honey. It is not that this golden jelly runs instead of water, but it refers to the large number of hives that have been around it since ancient times.

    These disappeared, but there were numerous remains -such as mills or houses- that testify to the importance that these small insects had in helping to build civilizations in this corner of Andalusia.
